I grew up in a Catholic family and we observed this particular religious tradition. As a little girl, I always looked forward to my mother’s frozen fish sticks and macaroni and cheese. Over the years, however, my palate changed (thankfully!). I began to look for healthier, homemade and more flavorful meatless recipes for Lent.

Finding tasty single serving meatless recipes can be a challenge sometimes. If you’re a big meat-eater, the thought of finding a meatless meal to enjoy might not seem easy.   2. I will have to save these. I love anything with shrimp in it. I am trying to eat one dinner a week without meat but its so hard!!

    I have decided to let you know just how much this site means to me. There are millions of sites that give recipes but not any for one or two person meals. I have been cooking my entire life and this last 5 years with only me i end up tossing out so much food and you only have so much room in the freezer, plus large means mean lots of eating the same thing for days on end. I lost the love of my life after 57 years to dementia and it’s been a nightmare for me as it never seems to stop with new things when your living alone and no relatives or help. Now at 78 I have been diagnosed with cancer and it will be even more helpful to have these recipes for one. Thank you so very, very much for all the hard work you do to bring us these recipes and your blog.
