Ingredients

- Chicken: 1 (6-ounce) boneless, skinless breast or thigh. Thighs are juicier with richer flavor; breasts are leaner. Extra chicken can be used in jerk chicken for one, chicken marsala for one, or chicken Parmesan for one.
- Broth: Low-sodium broth is best for controlling salt while adding flavor. If using regular broth, reduce added salt. Use leftover broth in slow cooker chicken burrito bowl or chicken stew for one.
- Capers: Briny and tangy, they add a lemony pop. Use extras in a fresh tomato salad. Chopped green olives can be substituted if needed.

This recipe has potential but I need to tweak it to my liking. The chicken is flavourful but the sauce is sour and soupy, the capers ended up mushy. I thickened the sauce in a saucepan with some flour and it went well over rice. Next time: less lemon juice, add the capers at the end of cooking, finish the sauce with a little flour and it should be perfect !
I agree that the sauce is the best part of this dish. A perfect blend of flavors. Mine also cooked in 2 1/2 hours. Wonderful to find something so easy that tastes so good.
I used two chicken thighs which each weighed just under 4 ounces each and allowed 3 hours for cooking and the flavour was great though a little dry so for my slow cooker maybe 2 1/2 hours and for a low carb meal served over zoodles for a very enjoyable dinner, made for What’s On The Menu tag game at FF&F.
I made this and it was awesome! I used 2 bone in breasts. It was moist, flavorful and so easy!
