Ingredients 
 

  • ½ tablespoon olive oil
  • ½ cup chopped onions
  • 1 clove garlic , minced
  • ½ cup cubed ham
  • 1 cup baby spinach , loosely packed
  • 2 large eggs
  • 3 tablespoons heavy cream
  • ¼ teaspoon kosher salt
  • teaspoon coarsely ground black pepper
  • ½ cup cubed Swiss cheese

Instructions 

  • Heat oven to 375 degrees F (190 degrees C).
  • Heat a medium-sized skillet on medium-high heat.  Add the olive oil and swirl to evenly coat pan.
  • Add the chopped onions and minced garlic to the pan; cook stirring occasionally until onions are translucent, about 5 minutes.
  • Add the cubed ham to the pan and cook, stirring occasionally for 1 minute. Add the spinach and stir until spinach is beginning to wilt, about 3 minutes.
  • Remove pan from the heat and set aside.  
  • In a medium-sized mixing bowl, whisk together the eggs, cream, salt and pepper. Fold in the spinach and ham mixture.
  • Stir in the cheese and pour into lightly greased 5-inch baking dish or dish of a similar size.
  • Bake until quiche is puffed and golden, about 25 minutes

    This was simple and easy to prepare plus tasty. The only criticism is the โ€œprep and cook time. Probably could get everything together and chopped in 5-10 minutes if organized, but then there is 10 minutes of sautรฉ cooking and 25 minutes in the oven. This dish took me close to an hour .

      Hi Dick! Feel free to use milk or half and half instead of cream – the higher the fat, the better. Cream provides the richness and creates a more custardy texture but milk will work in a pinch. Hope you enjoy!

    I never made a quiche before, but I had dental surgery this week and was looking for a soft egg dish to make.
    I also didn’t feel like going shopping, so I keept to the ratios and substituted what I had on hand (frozen spinach, no ham and a French soft cheese) and it turned out great.
    I really like a recipe that can be adapted and changed up and this one is definitely a keeper.
    So easy, quick and tasty. I’m sure, I’m going to make this again.

      Yes, this quiche recipe can be doubled to serve two. Double the ingredient amounts and use an oven safe baking dish that measures either 6.5×6.5 inches or one that measures 6×8 inches.
