Ingredients

cream, pepperoni, mozzarella, seasonings, and eggs on a brown table.

This section provides a quick rundown of the ingredients used in this easy pepperoni quiche recipe. For complete measurements and step-by-step instructions, please scroll to the recipe card located at the bottom of this post.

  • Eggs and Heavy Cream: At the heart of all our crustless quiche creations are two large eggs and 4 tablespoons of heavy cream. These ingredients ensure a rich, custard-like texture. Consider using leftover cream in Tuscan Chicken, Fettuccine Alfredo, and in a mug of rich Hot Chocolate.
  • Seasonings: Elevate the flavor with salt, black pepper, garlic powder, and Italian seasoning. Alternatively, you can switch out the Italian seasoning for fresh or dried basil and oregano, based on your preference.
  • Pepperoni and Mozzarella Cheese: These are the stars of the show, mimicking the classic elements of a pepperoni pizza. Feel adventurous? Switch out the cheese type or swap the pepperoni for crumbled, cooked sausage. If you’ve got leftover pepperoni and mozzarella, consider using them to make a French Bread Pizza or a Personal Pepperoni Pizza.

Recipe Variations

Crustless quiche recipes are all about flexibility and personalization, making them the perfect canvas for creative cooking. Whether you’re catering to specific dietary needs or just looking for a fun twist, here are some inspired variations to take your single serving crustless pizza quiche to the next level.

  • Vegetarian Pizza Quiche: Swap out the pepperoni for an assortment of colorful veggies like bell peppers, mushrooms, and cherry tomatoes. Don’t forget to sprinkle some nutritional yeast on top for that cheesy flavor without the dairy.
  • Spicy Quiche: If you like things on the spicier side, consider adding a kick with jalapeños or a pinch of red pepper flakes. Complement the heat with a softer cheese like feta to balance flavors.
  • Breakfast Quiche: Who says pizza can’t be for breakfast? Add in some cooked breakfast sausage and a handful of spinach for a morning-friendly version. A dollop of salsa on top would also work wonders.

Expert Tips

  • Choose the Right Baking Dish: For optimal results, it’s recommended to use a 5-inch baking dish that holds about 1.5 cups and has an area of 25 square inches. A 4×6-inch dish with an area of 24 square inches is also a good choice.
  • Customize with Your Favorite Toppings: Don’t hesitate to personalize your crustless pizza quiche by adding ingredients you love on a pizza. Some popular add-ins that really elevate the dish include sliced black olives, green bell peppers, cooked Italian sausage, and a handful of fresh spinach.
  • Test for Doneness: A toothpick inserted should come out clean.
  • Cool Slightly: Let it rest a few minutes before slicing to allow the flavors to meld.

Can you use milk instead of heavy cream

    1. Joanie Zisk says:

You can use milk instead of cream but cream gives the quiche a rich and more custardy texture.

  2. Joyce says:

This was great I put red onion and yellow pepper in this.

  3. J. Hegyi says:

Terrific recipe. You can also add 1/4 cup each of any (or several) vegetables into the quiche, if you like.

  4. Lynette says:

Made this tonight. I added mushrooms, red bell pepper, and onion. I also added pizza sauce the last 5 minutes. I will definitely be making this again. It is a good way to use leftover veggies and meats.

  5. Aloha Kirsch says:

I made the Pizza Quiche today & didn’t have pepperoni so I used crumbled cooked ssausage & also added onion powder, basil & oregano. I had a half of a plum tomato that I chopped & added. I lightly buttered my dish but when I cut my quiche it was sticking to the bottom. I baked it for 30
Min. The top was light brown. Not sure if I baked it too long? It still tasted delicious. Will definitely make it again.

I cut the recipe in half, used diced canadian bacon rather than the pepperoni and skipped the Italian seasoning. Baked in a ramekin, perfect delicious breakfast for one.

Actually, the best part is that it tastes great and is quick and easy to prepare. I made this tonight and it was REALLY good. It truly does taste like pizza and I didnโ€™t even notice thereโ€™s no tomato sauce. I added some chopped green pepper and minced onion and think Iโ€™ll add some sliced mushrooms next time. Definitely a keeper. Thank you for such a wonderful recipe!
