How To Make Mini Slow Cooker Sesame Chicken

  1. Place the chicken into the base of a mini slow cooker. Sprinkle a pinch of salt and pepper over the tops of the chicken.
  2. In a medium-sized bowl, whisk together the honey, soy sauce, ketchup, olive oil, dried onions, garlic, and red pepper flakes.
  3. Pour the sauce over the chicken thighs. Cover the slow cooker and cook on low until the chicken is tender, 4 hours.
  4. Remove the chicken from the slow cooker and place it on the cutting board.
  5. In a small bowl, whisk together the cornstarch and water. Pour the cornstarch mixture into the sauce in the slow cooker. Stir, cover, and cook for an additional 10 minutes at a high temperature.
  6. Cut the chicken into bite-sized pieces and stir into the sauce.
  7. Top with sesame seeds and serve over rice, if desired.

Quick and easy mini slow cooker sesame chicken for one made with a sweet honey sesame sauce. The perfect amount if you're cooking for one.

Ingredients 
 

  • 1 (6 to 7 ounce) boneless skinless chicken thigh
  • teaspoon kosher salt
  • teaspoon coarsely ground black pepper
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 2 teaspoons ketchup
  • 1 teaspoon olive oil
  • 1 teaspoon dried onions
  • 1 clove garlic , minced
  • teaspoon red pepper flakes (optional)
  • 3 tablespoons water
  • 1 teaspoon cornstarch
  • ½ tablespoon sesame seeds
  • 1 cup cooked rice (optional)

Instructions 

  • Place the chicken thigh into the base of a mini slow cooker.
  • Sprinkle a pinch of salt and pepper over the tops of the chicken.
  • In a medium-sized bowl, whisk together the honey, soy sauce, ketchup, olive oil, dried onions, garlic and red pepper flakes.
  • Pour the sauce over the chicken thighs. Cover the slow cooker and cook on low until the chicken is tender, 3-4 hours.
  • Remove the chicken from the slow cooker and place on cutting board. 
  • In a small bowl, whisk together the cornstarch and water. Pour the cornstarch mixture into the sauce in the slow cooker. Stir, cover and cook for an additional 10 minutes on a high temperature.
  • Cut the chicken into bite-sized pieces and stir into the sauce.

TO MAKE A SINGLE SERVING OF RICE
Ingredients
1/2 cup water
1/4 teaspoon kosher salt
1/2 tablespoon butter
1/4 cup white rice 
 
Directions
1.  Bring the water, salt and butter to a boil in a small saucepan. Stir in the rice.
2.  Reduce to a simmer and cover with a lid.
3.  Simmer for 20 minutes or until all water is absorbed.

  1. Since Amazon no longer has the tiny slow cooker like your blue one, I’m curious to know who makes it. The ones they carry now don’t suit me and cost over $20 more than yours did. Perhaps it can be found elsewhere. I’m hoping so anyway. Still enjoying your recipes and handy info. in the newsletter, on Pinterest and with the group on Facebook.

      The blue slow cooker is a Hamilton Beach Party Crock and you’re right, it doesn’t seem to be carried on Amazon at the moment. I also have and use a 1.5 quart Elite Gourmet slow cooker and on Amazon the price ranges from $12 – $15. I’ve used it for a while and it hasn’t given me any trouble.
