What Is Salisbury Steak?

Salisbury Steak is essentially a well-seasoned ground beef patty that’s smothered in a rich, brown gravy. It’s a hearty dish that perfectly balances savory flavors.

The dish was created by an American doctor, Dr. James H. Salisbury, during the Civil War era. It was initially designed as a health food but has since become a staple comfort dish enjoyed by many.

Ingredients

For a detailed list of ingredients and step-by-step instructions, check out the recipe box below.

  • Ground beef: This Salisbury steak recipe calls for 80% lean ground beef, which has a 20% fat content. Feel free to choose any fat percentage that you prefer. If you have leftover ground beef, consider using it to make Beef Tacos, Lasagna Rollups, Stuffed Peppers, or Nachos.
  • Beef Patty Ingredients: The flavor gets a boost from a mix of Worcestershire sauce, Italian seasoning, mustard powder, garlic powder, kosher salt, and black pepper.
  • Olive oil: Extra virgin olive oil is my go-to for this dish, and most other recipes on this blog. It’s the purest form of olive oil, packed with robust olive flavor and rich in nutrients. If you prefer, you can substitute with a lighter olive oil.
  • Gravy ingredients: Elevate your dish with a homemade gravy made from butter, sliced onions, sliced mushrooms, Worcestershire sauce, beef broth, and sour cream.

Recipe Variations

Feeling adventurous? Let’s kick things up a notch! Here are some ways to customize your homemade Salisbury Steak to suit your palate or dietary needs.

  • Turkey Salisbury Steak: Swap out the beef for ground turkey for a leaner protein option. Just adjust your cooking times slightly as turkey tends to cook faster than beef.
  • Vegan Salisbury Steak: Use a plant-based meat alternative and vegan Worcestershire sauce. For the gravy, opt for vegetable broth and vegan sour cream.
  • Spicy Twist: Add a dash of cayenne pepper or some sliced jalapeños to the beef mixture for a spicy kick.
  • Mushroom Overload: Love mushrooms? Double the quantity in the gravy for a more mushroom-forward flavor.
  • Cheese Topped: Before covering the cooked beef patty with gravy, add a slice of your favorite cheese like cheddar or Swiss. Cover the skillet for a minute to let the cheese melt over the patty.

How To Make Salisbury Steak

This Salisbury Steak recipe is a standout because it’s both low-carb and keto-friendly—just like Dr. Salisbury intended. We skip the bread crumbs and other fillers but keep all the amazing flavors intact. For the full recipe, check the details below.

  1. Prepare the Beef Patty: Combine ground beef, Worcestershire sauce, mustard powder, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  2. Cook the Patty: Shape the beef mixture into a round or oval patty. Fry the patty in a skillet over medium-high heat until it’s cooked through and no longer pink in the center.
  3. Rest the Beef: Once cooked, transfer the beef patty to a plate and cover it with aluminum foil to keep it warm while you whip up the gravy.

Make the Gravy

  1. Start with Butter: Melt a half tablespoon of butter in the same skillet you used for the patty.
  2. Sauté Veggies: Add your sliced onions and mushrooms to the skillet and sauté them until they’re tender.
  3. Add Flavors: Stir in Worcestershire sauce and beef broth to the skillet.
  4. Simmer and Serve: Bring the mixture to a quick boil, then reduce to a simmer. Let it simmer for 4-5 minutes until it has reduced to your desired consistency. Drizzle the gravy over your Salisbury steak and dig in!

Expert Tips

  • Season Well: Don’t skimp on seasoning; it brings the meat to life.
  • Pan Searing: For a crusty exterior, make sure the pan is hot before adding the patty.
  • Gravy Consistency: For a thicker gravy, allow it to simmer a bit longer.

What To Serve With Salisbury Steak

Elevate your dining experience with these fantastic side options that pair beautifully with Salisbury Steak. Each suggestion complements the rich, savory flavors of the dish to make for a well-rounded meal.

  • Mashed Potatoes: A classic side that goes beautifully with Salisbury Steak. For those keeping it low-carb, mashed cauliflower is a fantastic alternative to mashed potatoes. It provides a similar creamy texture while being keto-friendly.
  • Green Beans Almondine: Lightly sautéed green beans with a sprinkle of almond slivers offer a crunchy contrast to the soft and juicy Salisbury steak.
  • Roasted Veggies: Toss some zucchini, bell peppers, and cherry tomatoes in olive oil and your favorite herbs. Roast until at 425 F for 20 to 25 minutes.
  • Cauliflower Rice: Seasoned with a bit of garlic and herbs, cauliflower rice stands as another excellent low-carb side dish that soaks up the gravy beautifully.
  • Simple Caesar Salad: Sometimes, a fresh salad with leafy greens, a great dressing, and some crunchy croutons is all you need to complete the meal.

  1. Donna says:

I made for dinner tonight. It absolutely delicious. I made two smaller patties instead of one larger one, more mushrooms just because I love them. I did find it a bit too peppery for my taste. I like a thicker gray through, what can I use to thicken it? ๐Ÿ‘๐Ÿ‘๐Ÿ‡จ๐Ÿ‡ฆ

    1. Tammy says:

You could add flour to the melted butter after veggies are soft, but you must whisk whisk whisk to prevent the lumps from happening. You could also add some cornstarch to it at the end that always works well!! Good luck

  2. dave says:

made this tonight..without the sauce ..instead fried some boiled potato in the fat out of the meat.. awesome taste in the meat…cheers

  3. Shera Matthews says:

So glad to find this site!
Re Salisbury steak recipe, it was good flavor, but needed some more tweaking & time. The onions still had some crunch texture sauce didn’t reduce much & meat could have used some low covered heat in an oven to get more tender. I will keep trying recipes & customize this one a bit more. Thank you for the one dish idea & it’s helpful!

  4. Daphne White says:

I typically buy 93%/7% lean ground beef, what do you recommend for this recipe? I can’t wait to try this.

    1. Joanie Zisk says:

      Hi Daphne,

That percentage would be perfect. I usually use between 85 and 93 percent.

      Enjoy!

  5. Rhonda says:

Great recipe. Good flavor. I usually don’t care for Salisbury steak. The ingredients peaked my interest and the picture made it look yummy. Made it as written. I wouldn’t change a thing. Thanks! It’s a keeper.

    1. Joanie Zisk says:

      Hi Rhonda,
I’m so happy you enjoyed the salisbury steak. Thanks so much for taking the time to let me know.

      Joanie

  6. Judy says:

The recipe looks good, and ultimately “doable” until I got to the bottom. 1tsp of sour cream. I don’t often buy sour cream, and I certainly wouldn’t buy it for a recipe that calls for 1 tsp. Is there something I could substitute?

    1. Joanie Zisk says:

      Hi Judy,
The sour cream just makes the sauce a little creamier. You could definitely leave the sour cream out or stir in a little cream or whole milk instead.

      Joanie

      1. Michelle says:

Or even greek yogurt or plain yogurt or cream cheese.

  7. Katie says:

I made the Salisbury steak recipe and it was delicious, the gravy was very thin. What did I do wrong

    1. Joanie Zisk says:

      Hi Katie,

I’m so glad you enjoyed the salisbury steak! Thanks so much for letting me know.

The sauce reduces as it simmers so quite possibly your sauce might have needed to simmer just a bit longer.

      Joanie

    2. Tammy says:

Add some cornstarch at the end itโ€™ll thicken it well little goes a long way, I usually add a tsp. Cornstarch to 4 oz. of water stir well and add to gravy a little at a time and sometimes I use tblp of the cornstarch
