Ingredients

- Flour: All-purpose flour is the base of the crust, providing structure and stability.
- Sugar: Used in both the crust and the filling to add just the right amount of sweetness.
- Salt: Enhances the overall flavor of the crust and filling.
- Butter: Creates a flaky, tender crust when combined with the flour.
- Ice Water: Helps bind the dough together, making it easy to roll out.
- Apple: Use one small apple. Any variety you enjoy works well, but I often use Gala apples because they’re my favorite for snacking.
- Cinnamon: Adds a warm, spiced flavor to the apple filling.
- Lemon Juice: Balances the sweetness of the filling and keeps the apple from browning.
Crust Alternatives
If making a pie crust from scratch feels intimidating, try using a crushed graham cracker crust or a simple shortbread crust instead. You can also use a circle cut from a store-bought refrigerated pie crust for a quick and easy option.
How To Make A Mini Apple Pie
See the recipe box below for ingredient amounts and full recipe instructions.
- Prepare the Filling: Place the apple slices in a mixing bowl. Add the sugar, cinnamon, and a splash of lemon juice, then mix well to coat the apples. Set aside while you prepare the dough.
- Make the Dough: In a small bowl, combine the flour, sugar, and a pinch of salt. Use a fork to cut in the butter until the mixture resembles damp sand. Gradually add a little ice water, mixing until the dough comes together.
- Roll Out the Dough: Transfer the dough to a lightly floured surface and shape it into a ball. Roll it out into a circle large enough to fit your baking dish.
- Prepare the Crust: Lightly grease a 5-inch tart pan or a 10-ounce ramekin. Gently press the dough into the dish, trimming any excess. Prick the bottom of the crust a few times with a fork to prevent puffing during baking.
- Add the Filling: Spoon the apple mixture into the crust and dot the top with small pieces of butter.
- Bake: Place the pie in a preheated oven and bake for about 20 minutes, or until the crust is golden brown and the apples are tender.
Let the pie cool slightly before serving and enjoy!
Expert Tips
- Keep Ingredients Cold: Use cold butter and ice water when making the crust. This is key to achieving a flaky texture.
- Slice the Apple Thinly: Thinly slice or chop the apple into small pieces to ensure even and faster cooking.
- Avoid Overmixing: Mix the dough just until it comes together. Overmixing can lead to a tough crust.
- Prevent Messes: Place a baking sheet under your tart pan or ramekin to catch any juices that may bubble over during baking.
