- Medium-sized saucepan
Ingredients
- 3 ounces semi sweet chocolate -chopped
- 1 tablespoon salted butter
- 1 large egg -separated
- ¼ teaspoon cream of tartar
- 3 tablespoons sugar -divided
- ¼ cup cold heavy cream
- ¼ teaspoon vanilla extract
Instructions
- Put the chocolate and butter in a heatproof bowl, then set it over a saucepan filled with 1 inch of simmering water. Make sure the bottom of the bowl does not touch the water. Stir the mixture until the chocolate melts and becomes smooth.
- Remove the bowl from the heat and let cool. Whisk the egg yolk into the chocolate and mix until smooth. Set aside.
- In another bowl, beat the egg white until foamy. Add the cream of tartar and beat until soft peaks form. Slowly add in 2 tablespoons of the sugar and continue beating until stiff peaks form.
- In another bowl, beat the heavy cream until it begins to thicken. Add the remaining 1 tablespoon of sugar and the vanilla and continue beating until soft peaks form.
- Now it’s time to assemble the mousse. Very gently fold in the egg whites into the chocolate mixture.
- Next, fold in the whipped cream.
- Transfer the mousse to a dessert dish, cover and chill for several hours.
- Top with extra whipped cream, if desired
