Why You’ll Love This Recipe

  • Easy to Make: Simple steps and everyday ingredients make this baked buffalo chicken recipe easy to prepare.
  • Ready in 30 Minutes: From oven to table in about 30 minutes, making it a great quick chicken dinner.
  • Perfectly Portioned: A single serving buffalo chicken recipe that can easily be doubled if needed.
  • Homemade Buffalo Sauce: Made with butter and hot sauce so you can control the heat and flavor.
  • Baked, Not Fried: Oven baked buffalo chicken delivers bold flavor without frying.

Buffalo chicken has always been about bold flavor without a lot of fuss, and that’s exactly what I wanted with this baked buffalo chicken recipe.

Buffalo sauce is a simple combination of hot sauce and butter, but it delivers that signature spicy, tangy flavor that makes buffalo chicken so popular. I like making the sauce at home because it lets you control the heat. Add more hot sauce if you like it spicy or pull back a bit for a milder version.

Baking the chicken keeps it juicy while letting the sauce soak in, and finishing it with cheese adds balance to the heat. This is the kind of recipe I turn to when I want a flavorful chicken dinner that feels satisfying but still easy to make.

Serve this baked buffalo chicken with a crisp green salad and a light vinaigrette, rice pilaf for one, or a bowl of buttered noodles to round out the meal. You can also tuck the chicken into homemade tortillas to make an easy buffalo chicken wrap.

Ingredients

If you have any ingredients leftover from this easy buffalo chicken recipe, check out our Leftover Ingredients Recipe Finder.

  • Chicken Breast: This recipe uses one boneless, skinless chicken breast. It bakes up tender and flavorful when cooked properly. If you prefer darker meat, boneless chicken thighs can be used instead and will be slightly juicier. If you have another chicken breast on hand, try it in chicken paprika for one, Greek chicken for one, or chicken Parmesan for one.
  • Buffalo Sauce Base: Classic buffalo sauce is made with butter and hot sauce. This recipe uses salted butter and Louisiana Brand Hot Sauce for its balanced heat and familiar buffalo flavor. You can use any hot sauce you enjoy. For a dairy-free option, substitute plant-based butter.
  • Mozzarella Cheese: Mozzarella melts smoothly over the chicken and softens the heat of the buffalo sauce. Smoked mozzarella adds a deeper flavor if you like a slightly smoky finish. Dairy-free mozzarella-style cheese works well here too.
  • Blue Cheese: Blue cheese adds a bold, tangy contrast to the spicy buffalo chicken. If you prefer a milder option, feta or goat cheese can be substituted. Extra blue cheese crumbles are great for making a small batch of blue cheese dressing.
  • Green Onions: Green onions add color and a fresh bite that balances the richness of the sauce and cheese. Chives can be used instead for a similar flavor with a more delicate texture.

Expert Tips

  • Extra Buffalo Sauce: If you like a saucier buffalo chicken, double the butter and hot sauce mixture. Spoon extra sauce over the chicken after baking or save it for other recipes.
  • Preheat the Oven: Always start with a fully preheated oven. This helps the chicken cook evenly and prevents it from drying out.
  • Blue Cheese Option: For more blue cheese flavor, add some of the crumbles during the last few minutes of baking, then finish with more on top after it comes out of the oven.
