This baked buffalo chicken is tender, juicy, and filled with flavor. One chicken breast topped with a homemade buffalo sauce, mozzarella cheese, and blue cheese crumbles. It's cheesy, easy to make, and bakes in just 15 minutes!

This easy buffalo chicken recipe is one of my favorite go-to recipes when I'm looking to put a meal on the table quickly and effortlessly. It's a dish that is so full of flavor and easy to make too. This recipe features one chicken breast or thigh which is topped with homemade buffalo sauce and mozzarella cheese then baked to juicy perfection. Before eating, top with blue cheese crumbles and chopped green onions.

What Is Buffalo Sauce?

Buffalo sauce is a simple mix of melted butter and hot chili sauce. There are fancier versions which may include a dash of Worcestershire sauce and rice vinegar but I prefer to keep mine simple.

You can purchase buffalo sauce in the store or make your own. Buffalo sauce takes chicken to a whole new level and you can adjust the amount of hot sauce you use to suit your tastes. If you like spicier sauce, add a drop or two of additional hot sauce to the recipe.

  • Chicken: I like using a boneless skinless chicken breast or thigh.
  • Butter & hot sauce: These are the two main ingredients needed to make buffalo sauce. I use salted butter and my favorite brand of hot sauce, Louisiana Brand Hot Sauce. Feel free to use the brand you like best.
  • Mozzarella cheese: Optional, but adds a wonderful flavor. I highly recommend using it. As you can see from the pictures, I used sliced deli mozzarella. You could also use shredded mozzarella or sliced fresh mozzarella.
  • Blue cheese crumbles & sliced green onions: For garnish and incredible flavor!

Pro Tip: Consider keeping chicken pieces in the freezer so you can easily pull one out, defrost it, and cook it when ready. Look for chicken breasts (or thighs) and purchase them when they're on sale. Then, immediately divide, individually wrap and freeze pieces for later use. The USDA recommends freezing chicken breasts no longer than nine months for optimal quality.

How To Make Buffalo Chicken

  1. Place the chicken breast in a baking dish. Whisk together melted butter and hot sauce in a small bowl and pour over the chicken.
  2. Place mozzarella cheese on top of the chicken.
  3. Bake for 12-15 minutes.
  4. Remove from the oven and top with blue cheese and green onions.

How To Know When Chicken Is Cooked?

Poultry should be cooked to an internal temperature of 165 degrees F as read by a meat thermometer. Cooking times will vary depending on the size and thickness of your chicken.

Can I Use This Chicken To Make A Buffalo Chicken Salad?

Adding zesty buffalo chicken to a salad takes chicken salad to whole new level. This chicken salad comes together quickly and will surely satisfy.
Cook the chicken as directed in this recipe. Cut the chicken into 1/2-inch pieces and place in a bowl.
Add 2 tablespoons of chopped celery and 2 tablespoons of ranch dressing to the bowl and stir.
Place 2 cups of chopped romaine lettuce on a plate and mix in the chicken salad.

Can This Recipe Be Doubled?

Yes! Just double all of the ingredients and bake in a larger dish at the same temperature and for the same amount of time as called for in the recipe.

Ingredients

  • 1 6-ounce boneless, skinless chicken breast
  • 1 tablespoon salted butter , melted
  • ½ teaspoon hot sauce
  • 1 slice mozzarella cheese (about 3 tablespoons of shredded mozzarella)
  • 2 tablespoons blue cheese crumbles
  • 1 tablespoon sliced green onions

Instructions

  • Heat oven to 400° F (200° C).
  • Place chicken breast in a medium-sized baking dish.
  • Stir together the melted butter and hot sauce and pour over the chicken.
  • Top evenly with mozzarella cheese.
  • Bake in the preheated oven for 12-15 minutes or until chicken is cooked through and registers 165° on a meat thermometer.
  • Remove from the oven and cover to let the chicken rest for 5 minutes. Top with blue cheese and sliced green onions.

    I doubled the chicken for the buffalo chicken and I used 2T Sweet Baby Ray’s Buffalo Wing Sauce (cause I had some!) ! I’ll have the chicken with rice pilaf and veggies one night and buffalo nachos another night with a salad!! Thanks!!
