Preparing the chicken: Remove the meat from the chicken and I think it’s helpful to portion out about a cup of meat and put it in several zip bags. That way it is easier to grab when you want to make one of these recipes.

After you’ve removed all the chicken from the bones, don’t toss it just yet! Use the bones to make homemade chicken stock. It’s easy to make and perfect for soups, stews, or any recipes calling for broth or stock.
Here’s how to make it:
1. Place the chicken bones, skin, and any gelatin that’s collected in the bottom of the container into a large pot or dutch oven.
2. Cover with cold water.
3. Add 2 bay leaves, 10 whole peppercorns, 1/2 teaspoon of dried rosemary, and 1/2 tablespoon of dried thyme.
4. Rough chop 2 medium carrots, 2 medium celery, 1 onion, and 2 garlic cloves and add them to the pot.
5. Bring to a boil over medium heat, skimming off any foam that rises to the top. Reduce the heat to low and cover. Simmer on low for at least 2 hours, or up to 8 hours for an even richer flavor.
6. Strain the stock through a fine-mesh strainer, discarding bones, vegetables, and seasonings so you are left with a clear, smooth stock.
7. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
Crockpot or slow cooker version:
1. Add everything to the base of your slow cooker. Cook on high for 2-3 hours or on low for 4-6 hours.
2. Strain the stock through a fine-mesh strainer, discarding bones, vegetables, and seasonings so you are left with a clear, smooth stock.
