Make a quick and easy single-serving crustless spinach quiche in 30 minutes! This healthy recipe is perfect for breakfast, lunch, or a snack.

Ingredients 
 

  • ½ tablespoon olive oil
  • ½ cup chopped onions
  • 1 clove garlic , minced
  • ½ cup cubed ham
  • 1 cup baby spinach , loosely packed
  • 2 large eggs
  • 3 tablespoons heavy cream
  • ¼ teaspoon kosher salt
  • teaspoon coarsely ground black pepper
  • ½ cup cubed Swiss cheese

Instructions 

  • Heat oven to 375 degrees F (190 degrees C).
  • Heat a medium-sized skillet on medium-high heat.  Add the olive oil and swirl to evenly coat pan.
  • Add the chopped onions and minced garlic to the pan; cook stirring occasionally until onions are translucent, about 5 minutes.
  • Add the cubed ham to the pan and cook, stirring occasionally for 1 minute. Add the spinach and stir until spinach is beginning to wilt, about 3 minutes.
  • Remove pan from the heat and set aside.  
  • In a medium-sized mixing bowl, whisk together the eggs, cream, salt and pepper. Fold in the spinach and ham mixture.
  • Stir in the cheese and pour into lightly greased 5-inch baking dish or dish of a similar size.
  • Bake until quiche is puffed and golden, about 25 minutes

    I am new to your website, love it. I love the crustless quiche. Can this be made
    night before and warmed up in the morning, as I at times have to go into work very
    early in the morning to work. What would be the best way to up warm it up.

    1. Hi Tim, welcome! Yes, the quiche can be made ahead and warmed in the microwave or in the oven. If reheating in the oven, take the quiche out of the refrigerator to allow it to come to room temperature. Heat the oven to 375 F and cover the quiche with aluminum foil. Heat 10 minutes or until warmed through. If reheating in the microwave, no need to cover the quiche. Microwave on medium for 1-2 minutes.

  2. Made this before delicious but today I had a piece of leftover crab from supper, used it instead of ham and used a different cheese. Turned out great.

  4. This is a great recipe. One variation that works is to replace the spinach with broccoli. I reduced the amount since broccoli doesn’t reduce as much as spinach. But either makes a great meal for one.

    1. I know this comment is old but I thought I’d offer my experience anyway. I’m literally taking my first bites of this dish as I type. I just pulled it out our my air fryer moments ago and I can confirm that it’s amazing!

      I prepared my quiche as instructed just adding a few herbs and spices for extra flavor (i.e. thyme, savory, and nutmeg). Put it in my preheated Ninja Foodi on the bake mode at 300° for 30 minutes. During the last 6 minutes of baking, I loosely covered the dish with aluminum foil to prevent over-browning the top. I’m not even done and I can’t wait to make this again ☺️

    1. Donna, your version is much healthier. Original recipe has toooo much salt, toooo much fat, toooo many calories. Also, it said to cook ham…any ham I ever bought was already cooked.

      1. Chris, the ham is cooked as most ham already is. The ham is simply added to the skillet to “heat” along with the onions and garlic. This is a low carb recipe – ham is salty and so is cheese, this is why the sodium is a little high. You can make your own substitutions according to your dietary restrictions.
