  • 1 garlic clove -minced
  • 1 small red bell pepper -cored, seeded, and large diced
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • 1 (15 ounce) can diced tomatoes
  • ½ teaspoon dried basil
  • 1 cup diced cooked chicken (about 5 ounces of chicken)
  • Optional, for topping: shredded cheddar cheese and sour cream

Instructions 

  • Heat olive oil in a medium skillet over medium-low heat. Add the onions and cook for 4-5 minutes until translucent.

    Okay for one cup of chopped onion I used one very small brown onion and 3 large shallots, one small red capsicum/bell pepper got 1 cup of medium dice, and added fresh basil to canned tomato and poached thighs (2 small ones) to make up the dish as per recipe and found it to be a huge serve, could only eat 2/3 of it but was enjoyed though the chili did punch through in some mouthfuls more than others so did not mix through as well as it should have but overall a very delicious and enjoyable dinner thank you, Joanie.
