Ingredients

- Chocolate: Use chocolate chips for convenience or choose any chocolate you love such as semi sweet, dark, or milk. Brands like Ghirardelli and Guittard melt smoothly, while Hershey’s offers that classic s’mores flavor. Extra chocolate? Use it to make small batch peanut butter bars, small batch chocolate chip cookies, a single brookie or a single nanaimo bar.
- Marshmallows: For a 10-ounce ramekin, use 7 to 8 large marshmallows or an even layer of mini marshmallows. Large marshmallows give you that toasted campfire look, while minis melt more evenly. Use leftover marshmallows in a small batch rice krispie treat or ambrosia for one.
- Graham Crackers: Graham crackers are the traditional dipper for s’mores dip, but digestive biscuits, ginger snaps, vanilla wafers, or fresh fruit such as strawberries or pineapple work well too. Extra graham crackers can be used in a no-bake single serving cheesecake or a mini icebox cake.
Recipe Variations
You can easily change the flavor of this baked s’mores dip with simple additions that readers commonly look for.
- Peanut Butter Addition Spread a thin layer of peanut butter over the chocolate before adding the marshmallows for a nutty, creamy flavor.
- Dark Chocolate: Replace the chocolate chips with dark chocolate chunks or chips for a deeper, more intense chocolate taste.
- Caramel Drizzle: Swirl caramel sauce over the melted chocolate before adding the marshmallows for a sweet caramel note.
- Cookies and Cream: Sprinkle crushed chocolate sandwich cookies over the chocolate layer for added texture and flavor.

Could this be made in a mini cast-iron skillet? I have one that is 4โ in diameter
It should work but I haven’t tested it in a 4 inch diameter cast iron skillet.
Terrific recipe. w
Great idea. Worked perfectly.
Great idea! Worked perfectly.
Chocolate chips were not melted but marshmallows were really toasted. I had even used mini chocolate chips that usually melt faster.
It’s disappointing to know the chocolate did not melt for you. As you can see from the photos and the video, the chocolate should melt. It is worth noting that some of the chocolate chips may retain their shape when heated, but once you dip a graham cracker into them, they should be fully melted. Also, if the ramekin you used was smaller than the recommended 10-ounce ramekin, the layer of chocolate chips would be too thick, making them not all melt.
One final possibility could be the type of chocolate chips used. Not all chocolate chips melt well because they are filled with stabilizers that help them keep their shape. This is why I recommend in the Ingredient Notes section that I use Ghirardelli, Guittard, or Hershey’s brands of chocolate for best results.
