Make Ahead Huevos Rancheros Breakfast Burritos filled with spicy black beans, onions and garlic, eggs, cheese and cilantro.

Ingredients 
 

  • 2 tablespoons salted butter , divided
  • ½ cup chopped onions
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • 2 cloves garlic , minced
  • 3-4 ounces canned chipotle peppers (almost ½ of a 7-ounce can of Chipotle Peppers in Adobo Sauce.) – I use Goya brand
  • 1 (15-ounce can) black beans , rinsed and drained
  • 8 large eggs , lightly beaten
  • 10 medium-sized tortillas
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped cilantro leaves

Instructions 

  • Cook the Filling: In a medium skillet, melt 1 tablespoon of butter over medium heat. Add onions, cumin, and salt, and cook for 2 minutes, stirring occasionally. Add the garlic, cook for 30 seconds more, then mix in the chipotle peppers and beans. Cook for another minute, then remove from heat and set aside.
  • Prepare the Eggs: In another skillet, melt the remaining butter and swirl to coat the pan. Cook the eggs for 4-5 minutes until done. Remove from heat, transfer to a plate, and let them cool slightly.
  • Assemble the Burritos: On a flat surface, lay out the tortillas. Add a spoonful of beans, an equal amount of eggs, 1 tablespoon of cheddar cheese, and 1/2 teaspoon of chopped cilantro to the center of each tortilla.
  • Fold and Store: Fold the sides of each tortilla inward, then roll them up tightly. Wrap each burrito in plastic wrap, place in a large bag, and store for up to 3 months.
  • Reheating Instructions: Unwrap and microwave on high for 1-2 minutes if frozen, or for 60-90 seconds if thawed.

    Looks very interesting, going to make a batch for freezing. While in California, the Huevos Rancheros burritos contained shredded roast beef, really was delicious. Have not found any recipes on the internet, guess I could just throw some in and see what happens.

      Thank you for catching that I didn’t add the reheating instructions. They have been added to the recipe card.
      Yes, use 8 or 10-inch flour tortillas.
      Reheating instructions: If heating from frozen, unwrap and microwave on high for 1 to 2 minutes or until heated through.
      If heating from thawed, microwave 60 to 90 seconds.

        I literally make ONE for myself sometimes. I take a low carb tortilla and put cheese on it. Then l microwave 1 Morningstar Farms sausage Patty. Tear or cut it in pieces and put on top of the cheese. Break 1 egg into a coffee mug, and beat it with a fork. Put in the microwave and cook to your liking. Put on top of the cheese and sausage. Sometimes l open a 4 oz can of diced chilies and add those. Top with ta o sauce, and roll up. Can be heated a short time in the microwave if needed.
