When the weather turns warm, this frozen strawberry daiquiri is one of the first drinks I reach for, and I make it one glass at a time.
I came up with it because every recipe I found made a full pitcher, and a pitcher is the last thing you need when you’re pouring for one. So I built this one from scratch with real strawberries and no mix. That’s what we do at One Dish Kitchen: real recipes scaled to a single serving.
The strawberry comes through first, sweet and ripe, with fresh lime brightening it so it never gets heavy. We blend in frozen strawberries instead of fresh because they thicken the drink and keep it cold. White rum is the one I reach for, since its clean, light taste lets the strawberries lead. Strawberries: I use frozen strawberries here. They thicken the drink and keep it cold and slushy as they blend. Fresh strawberries work too, but add a little extra ice to reach the same texture. For a thicker drink, freeze the fresh berries for an hour first. Use leftover strawberries in a strawberry milkshake or a knickerbocker glory.
Rum: White rum is what I reach for. Its flavor is clean and light, so it blends into the drink and lets the strawberries stay out front. Dark and spiced rums work, but they bring a deeper, stronger flavor that competes with the fruit, so reach for them only when you want a bolder, less strawberry-forward daiquiri. A golden rum sits in the middle and stays mild enough to keep things fruity. Extra rum goes into a small batch of rum balls.
Triple sec: This is an orange-flavored liqueur, originally from France. It adds a light citrus note that rounds out the lime and fruit. Another orange liqueur like Cointreau does the same job if that’s what you have. Use leftover triple sec in our small batch fall sangria recipe.
Lime juice: Fresh-squeezed lime gives the brightest flavor. Bottled juice works in a pinch, but it tastes flatter, so squeeze a fresh lime if you can.
Agave: This is my sweetener of choice. It’s already liquid, so it blends in smoothly with no graininess, and I like it better than simple syrup because there’s nothing to cook first. Start with the amount in the recipe, then add more to taste.
Ice: A cup of ice blended with everything else makes the daiquiri cold and slushy. Since this is a frozen daiquiri, the ice belongs here. For a thicker, less icy drink, use a little less ice and a few more frozen strawberries.
Recipe Variations
This strawberry daiquiri is easy to change up, starting with a virgin strawberry daiquiri for anyone skipping the alcohol.
Virgin strawberry daiquiri: Leave out the rum and triple sec, then blend in lemon-lime soda like Sprite or 7-Up. Apple juice or orange juice works too and adds another layer of fruit flavor.
Swap or add fruit: Replace up to half the strawberries, about ½ cup, with another frozen fruit. Pineapple makes it tropical, banana makes it creamy, and peach or mango leans sweeter. For more berry flavor, blend in frozen raspberries or blueberries.
Make it for two: Double every ingredient and blend in a larger pitcher blender. The texture stays the same, you just get two glasses.

Expert Tips

Don’t over-pour the rum. Alcohol doesn’t freeze, so a heavier pour thins the daiquiri and melts to soup faster instead of staying thick and slushy. Stick to the amount in the recipe.

Why won’t my daiquiri blend?

How can I make a virgin strawberry daiquiri?
To make a non-alcoholic strawberry daiquiri, use Sprite, 7-up, or another lemon-lime soda instead of the rum, and leave out the triple sec.
Another idea is to add apple juice or orange juice instead of rum. This gives the virgin daiquiri another layer of delicious flavor!
