I had a hankering for pancakes this morning and my go-to "serves 2" recipe always ends in leftovers (even between hubby & I!). With the egg ratio it can't be divided easily so I turned to Google and landed here. Still a little much for just me to eat, and a little on the flat side (probably more my fault than the recipe – I'm used to using soured milk & bicarb for added fluff!) but overall this is definitely a recipe I will play with again next time the craving hits.
