  • Flour: 1 cup of all-purpose flour is the standard amount of flour needed for homemade scones. You will also need a small amount for your hands and for dusting your work surface
  • Sugar: I recommend using 2 1/2 tablespoons of granulated sugar.
  • Baking powder and baking soda: Gives the scones a little lift.
  • Salt and lemon zest: For flavor.
  • Butter: Use 4 tablespoons of cold, salted butter. Make sure to keep the butter in the refrigerator until you are ready to use it. Cold butter is essential in making the best tasting scones. It ensures the scones will be flaky with crisp edges.
  • Heavy cream: I prefer using heavy cream (double cream) in this scone recipe but you can use milk or half & half instead.
  • Egg: One large egg provides structure and flavor.
  • Berries: Blueberries, strawberries, blackberries, and raspberries make great berry choices.
  • For the streusel topping: Use brown sugar, flour, ground cinnamon, and butter.

How To Make Scones In A Toaster Oven

  1. To get started, stir together flour, sugar, baking powder, salt, and baking soda in a medium-sized bowl.
  2. Using a pastry blender, a fork, or your fingertips, cut butter into flour mixture until mixture resembles fine crumbs.
  3. In a small bowl, whisk together cream, egg, and lemon zest. Pour into flour mixture and stir until just combined.
  4. Gently stir in the berries. Be very careful not to over mix.
  5. Turn dough out onto a lightly floured work surface. Knead very lightly and form a 5″ x 5″ circle that is 1″ thick.
  6. Cut circle into four wedges and place on a baking sheet.
  7. In a small bowl, mix the ingredients together to make the streusel topping.
  8. Brush the tops of the scones with cream and spoon the streusel topping over each one.
  9. Place the scones in a preheated toaster oven and bake for 12-15 minutes.

  • 1 cup all purpose flour

  • teaspoon baking soda
  • 4 tablespoons cold salted butter ,cut into small pieces
  • ¼ cup heavy cream plus 1 additional tablespoon for brushing over tops of scones
  • 1 large egg
  • 1 tablespoon lemon zest
  • ½ cup raspberries (or you can use blueberries, strawberries, or blackberries)

For the topping

  • 2 tablespoons brown sugar
  • 2 tablespoons all purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon salted butter , softened

        An air fryer is really just a small convection oven, so I don’t see why it wouldn’t work.

    You know how small a Cornish hen is, right? I once roasted two of them in a toaster oven for Christmas dinner when my oven was not working. They barely fit in my tiny, old toaster oven. Turned out great! I do love my much newer, larger one, though! And I love scones. Thanks for this recipe ๐Ÿ™‚

      You’re welcome Elaine. Wow, a Cornish Hen? I never would have thought of that. Toaster ovens are really just “mini” ovens so why not, right? I love my toaster oven too and especially enjoy using it in the summer when I don’t have to heat up my kitchen with my regular oven.

    I just splurged on a new Breville Toaster Oven (the smaller size one) and I LOVE it. My other one was over 20 years old and I had gotten some gift money and I’m so glad I got a new one! The newer ones can do so much and really are mini ovens and I love that I don’t have to heat up the whole kitchen for small batch baking and heating. We love scones so I’ll be adding this to my to try list!
