  • 6 tablespoons salted butter -melted
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon baking soda

Instructions 

  • Heat the oven to 350 degrees F (177 degrees C).
  • Spray or lightly butter muffin tin.
  • In a large bowl, whip the sugar and one of the bananas together until well blended.
  • Add the cooled melted butter, the egg, and the vanilla and beat well.
  • Mix in the flour, baking soda, and salt just until incorporated.
  • Peel and mash the remaining banana with a fork on a small plate. Fold into the batter.
  • Scoop the batter into the muffin tins and fill them 3/4 of the way. 
  • Bake until a toothpick stuck in the muffins comes out clean, 20-25 minutes.

    Great! I made the recipe as written. My bananas werenโ€™t overripe, just riper than I like with only a bit of brown sport. Perfect! Made quickly and easily with ingredients on hand. Not too sweet. Highly recommend!

    I have made the muffins several times and every time they have come out very moist and flavorful.
    I have actually substituted one of the bananas for a pureed baby food banana (just one) and did not notice any difference in flavor or texture. I also just made a batch substituting erythritol for sugar (1/3 cup + 1 teaspoon sugar) and 1/2 cup whole wheat flour and 1/2 cup AP flour and again no perceptible difference. I don’t like nuts so I used dried blueberries and mini chocolate morsels. I love this easy recipe.

    These are so wonderful, thank you for sharing your tried and true recipe! I added fresh blueberries dusted in flour and mashed a little bit. They turned out phenomenal. It’s a keeper! This made one dozen normal size muffins for me

      Yes, but the bananas also add moisture to the muffins. I would add 1/4 to 1/2 cup of applesauce instead or a few additional tablespoons of melted butter.
