Simple Sausage and Peppers Sheet Pan Recipe For One - Sliced sausage roasted with red and yellow peppers and onions. Easy cleanup because everything is cooked on one sheet pan! Simple, easy, and incredibly delicious.

Ingredients

  • 1 3.5 to 4-ounce smoked sausage link
  • 1 medium red pepper , seeded and sliced (could also use a yellow pepper or a combination of both)
  • 1/4 sweet onion , sliced (about 3 ounces)
  • 1/2 tablespoon olive oil
  • pinch kosher salt
  • pinch black pepper

Instructions

  • Heat the oven to 400 degrees F. 
    Slice the smoked sausage and spread on a small baking sheet.
  • Add the sliced peppers and onions to the pan.
  • Drizzle the olive oil over the top and add the salt and pepper.
    Toss with your hands until the sausage, peppers, and onions are coated with the oil, salt, and pepper.
  • Bake for 20 minutes.

Notes
