In a medium bowl, use an electric mixer to blend the granulated sugar, brown sugar, peanut butter, butter, and egg yolk until smooth.
Add the flour, baking soda, and baking powder and mix until a soft dough forms.
Place the remaining tablespoon of granulated sugar in a small bowl.
Roll the dough into 1-inch balls, coat each in sugar, and place them 2 inches apart on a parchment-lined or ungreased baking sheet.
Bake for 8 to 10 minutes, until the edges are lightly golden.
Press a chocolate candy into the center of each warm cookie immediately after baking.
Transfer the cookies to a cooling rack and let them cool for about 30 minutes, until the chocolate sets.

Try Different Candies: Hershey’s Kisses are traditional, but mini peanut butter cups, Rolos, or seasonal Kisses also work well.
Add Color: Roll the dough balls in sanding sugar or colored sugar for a bright, festive look.
Space the Dough Balls: Leave at least 2 inches between each dough ball so the cookies have room to spread and bake evenly.
Using Natural Peanut Butter: If using natural peanut butter, stir it thoroughly to blend the oils. Natural or alternative nut butters may change the texture and flavor slightly.
