This single serving chocolate rice pudding is creamy, rich, and made on the stovetop with simple pantry ingredients. Ready in about 30 minutes, it’s an easy chocolate dessert to enjoy warm or chilled.
Add the rice, milk, sugar, and salt to a 1-quart saucepan. Cook over medium heat, stirring occasionally, until the rice is tender and the mixture thickens, about 20 minutes.
Remove the saucepan from the heat. Stir in the cocoa powder and vanilla.
Add the chocolate chips and stir until fully melted and smooth.
Transfer to a bowl, let cool for 10 minutes, and serve warm.
