This single serving Chicken Divan features tender chicken, broccoli, and a creamy homemade sauce, topped with crispy breadcrumbs and baked to perfection.
Preheat the Oven: Heat the oven to 375°F (190°C). Lightly butter a 5x5-inch baking dish and set it aside.
Blanch the Broccoli: Bring a medium pot of water to a boil. Add the broccoli florets and cook for 2 minutes until tender-crisp. Drain well and set aside.
Cook the Chicken: Heat ½ tablespoon of olive oil in a 10-inch skillet over medium-high heat. Season the chicken with salt and pepper. Add the chicken pieces to the pan and cook for 2 minutes on one side. Flip the chicken and cook for another 2 minutes. Once fully cooked, remove it from the pan and set aside.
Sauté the Onions and Garlic: Add ½ tablespoon of olive oil to the pan. Stir in the onions and cook for about 2 minutes, stirring occasionally, until translucent. Add the garlic and cook for 30 seconds, stirring frequently to prevent burning.
Add the Chicken Broth: Pour the chicken broth into the pan and bring it to a simmer, stirring occasionally.
Add the Heavy Cream: Stir in the heavy cream and bring the mixture to a simmer. Cook, stirring frequently, for 1 minute.
Add the Sour Cream and Seasoning: Remove the pan from heat. Stir in the sour cream and Italian seasoning until well combined.
Combine the Ingredients: Stir in the cooked chicken, half of the shredded cheese, and the blanched broccoli.
Transfer to the Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly.
Prepare and Add the Topping: In a small bowl, mix the breadcrumbs, remaining cheese, and melted butter. Sprinkle the mixture evenly over the casserole. Place the baking dish on a rimmed baking sheet to catch any spills.
Bake and Serve: Bake for 20 minutes, or until the breadcrumbs are golden brown. Let the Chicken Divan cool slightly before serving.
Notes
Prepare Ahead – Read through the recipe and Ingredient Notes before starting. This dish comes together quickly, so having everything ready will make cooking easier.
Save Time – Use rotisserie chicken or pre-cooked chicken strips instead of cooking raw chicken.
Customize the Flavor – Add a pinch of nutmeg or curry powder to the sauce for extra depth.
Try Different Cheese – Swap out the cheddar for Gruyère, Swiss, or Monterey Jack for a different flavor.
If you'd like to double the recipe, double the ingredient amounts and use either two 5x5-inch baking dishes or one 6.5-inch square baking dish.
