Wash, peel, and cut the sweet potato into 1/4 to 1/2-inch wide fries. Keep the pieces uniform for even baking.
Place the fries in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with salt, black pepper, and smoked paprika. Toss to coat evenly.
Bake for 10 minutes.
Flip the fries and bake for another 10 to 15 minutes until browned and crisp.
