Reduce the Apple Cider: Pour 1 ¼ cups apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to medium-low and simmer for 15–20 minutes, stirring occasionally, until it reduces to ¼ cup. Let cool for 10 minutes.Note: You can do this step in advance. Store the reduced cider in the fridge until ready to use.
Preheat the oven to 350°F (177°C). Lightly spray a donut pan with non-stick spray and set aside.
In a small bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
In a medium bowl, whisk together the melted butter, brown sugar, granulated sugar, egg yolk, vanilla, reduced apple cider, and milk.
Add the dry ingredients to the wet and whisk until the batter is smooth and well combined.
Spoon or pipe the batter into the 6 greased donut cavities, filling each about ⅔ full.
Bake for 15–17 minutes, or until the edges and tops are lightly browned.Tip: Gently press the top of a donut—if it springs back, they’re done.
Let the donuts cool in the pan for 5 minutes.
Make the topping: Melt 3 tablespoons of butter in one bowl. In another, mix granulated sugar and cinnamon. Dip both sides of each donut in the melted butter, then coat in the cinnamon-sugar mixture. These donuts are best enjoyed fresh.
Notes
Don’t Use Vinegar: Apple cider vinegar is not the same as apple cider and will not work in this recipe.
Use the Right Topping: Cinnamon sugar gives these donuts their classic flavor. You can skip it to reduce sugar, but the taste will change.
Mix Gently: Overmixing can make the donuts dense and gummy. Mix until just combined.
Measure Flour Correctly: Stir the flour first, then spoon it into your dry measuring cup and level off. Don’t scoop directly from the bag.
Check Your Oven Temp: Use an oven thermometer to make sure your oven is baking at the correct temperature. This helps avoid under or overbaking.

No worries, this fabulous apple cider donut batter is incredibly versatile, allowing you to experiment with different forms of baked goods, like muffins and cake. Mini Apple Cider Cake: Use a 5x5-inch baking dish and bake at 350 F (177 C) for 25-27 minutes. Small 10-ounce ramekins or mini loaf pans are also suitable.
Cinnamon Sugar Topping (Highly Recommended): For that extra touch, brush melted butter over the muffins or cake, and sprinkle with cinnamon sugar. It enhances the flavor and adds a delightful crunch.
