Prepare the vegetables: Place chopped sweet potatoes and broccoli florets on a sheet pan. Drizzle with 1 tablespoon of olive oil and sprinkle with kosher salt and black pepper. Toss to coat and spread into a single layer.
Roast for 15 minutes.
Make the glaze: In a small bowl, stir together 1 tablespoon of olive oil, garlic powder (or grated garlic), honey, Dijon mustard, water, and rosemary.
Add the ham: Remove the pan from the oven. Move the vegetables to one side and place the ham steak on the other. If you'd like, slice the ham into two pieces for easier handling or serving. Brush the top with some of the glaze.
Bake for 7 minutes.
Flip and glaze again: Turn the ham over and brush the other side with the glaze. Bake for another 5 to 7 minutes, or until a meat thermometer reads 140°F (60°C).
Notes
Cut vegetables evenly: Aim for equal-sized pieces so everything roasts at the same rate. Smaller pieces cook faster and get crispier edges.
Use a rimmed sheet pan: This helps keep the glaze and any juices from running off into your oven.
