Italian Pasta Salad For One
This is the easiest Italian pasta salad recipe! A scaled down version of a classic pasta salad recipe made with chopped broccoli, salami, red peppers, feta and mozzarella cheeses and topped with a flavorful Italian dressing.
Servings: 1 serving
- 1/2 cup rotini pasta
- 1/3 cup chopped red peppers
- 1/4 cup broccoli florets
- 1 ounce salami , chopped
- 8 pitted black olives
- 3 tablespoons Italian salad dressing
- 2 tablespoons crumbled feta cheese
- 2 tablespoons shredded mozzarella cheese
Cook pasta according to package directions. Rinse under cold water, drain and set aside.
Combine all of the ingredients in a medium sized bowl. Toss well.
Refrigerate until cool and enjoy.
