Place the sweet potatoes in an even layer on a baking sheet. Try not to crowd them or else they won't bake properly. Drizzle olive oil over the potatoes, and add the paprika, salt, and pepper. Use your hands to mix well, so all pieces are coated with oil and spices.
Spread the sweet potatoes out in a single layer on the baking sheet.
Bake for a total of 25 minutes. After the first 10 minutes, remove the baking sheet from the oven and use tongs or a fork to turn over all of the sweet potato wedges.Return to the oven and bake for another 15-20 minutes, or until they are well-browned. Cooking time will depend on the thickness of the sweet potato wedges.
Remove from the oven and let fries cool for 5 minutes before eating.
