Chicken Fajitas For One
Homemade Chicken Fajitas For One! One tender and juicy chicken breast cooked in a skillet, sliced and served with sweet onions, crisp peppers, cheese and tortillas. So easy and so delicious!
Servings: 2 fajitas
- 1 tablespoon butter
- 1 6-ounce boneless, skinless chicken breast , cut into 1/2-inch strips
- 1/4 teaspoon kosher salt , divided
- 1/4 teaspoon freshly ground black pepper , divided
- 1/2 tablespoon olive oil
- 1/2 small onion , peeled and thinly sliced
- 1/2 small red or green bell pepper , seeded and cut into thin strips
- 2 8-inch flour tortillas
In a 10-inch skillet over medium-high heat, melt butter 30 seconds.
Sprinkle all sides of chicken pieces with 1/8 teaspoon salt and 1/8 teaspoon pepper. Place seasoned chicken in skillet and cook 6 minutes until all pieces are completely cooked through. Transfer to a medium plate, cover, and set aside.
Add olive oil to the skillet. Add onions, peppers, and the remaining salt and pepper and cook, stirring frequently, 5 minutes until vegetables have softened.
Return chicken to the pan and stir until heated through, about 1 minute, then spoon mixture onto tortillas. Enjoy immediately.
