Ingredients

  • 2 tablespoons salted butter , melted
  • 5 tablespoons granulated sugar
  • 1 large egg yolk
  • ¼ teaspoon vanilla extract
  • 5 tablespoons all-purpose flour
  • teaspoon baking powder
  • teaspoon ground cinnamon
  • teaspoon salt
  • 1 tablespoon milk
  • cup blueberries and/or raspberries

Instructions

  • Heat oven to 350 degrees F (177 degrees C).
  • In a small bowl, stir the butter and sugar together until well blended.
  • Add in the egg yolk and vanilla extract and stir until combined.
  • In a separate small bowl, whisk together the flour, baking powder, cinnamon, and salt. Pour into butter/egg mixture and stir to combine.
  • Stir in the milk.
  • Fold in the berries.
  • Pour batter into a small greased 8-ounce or 10-ounce ramekin or baking dish of a similar size.
  • Bake for 40 minutes or until top is golden. Cake is cooked through if a sharp knife inserted in the center comes out clean. Enjoy warm.
