Wash and dry mango. Cut the mango lengthwise alongside the pit and with a spoon, scoop the flesh from the mango sides and place in a blender.
Add the lemon juice and the honey to the blender and purée until smooth. Add a little water if necessary to move the fruit around in blender.
Pour the mixture into a freezer-safe container or dish and freeze until firm, about 4 hours.

Expert Tips
You can use 1 cup of frozen mango chunks instead of a fresh mango but be sure to use a blender that handles frozen fruit well. I use a Vitamix and love it. If you don't have a Vitamix or a Blendtec you can use a regular blender. You might find that you need to add a bit more liquid to the fruit to get everything moving in the blender.
You can make a sorbet out of almost any kind of fruit. Watermelon Strawberry Sorbet is one of my favorite sorbets and comes together just as easily as this mango sorbet.
If you would like to make a vegan mango sorbet, you can substitute agave nectar for the honey.
