Mango Sorbet For One

Ingredients

  • 1 fresh mango (or you could use 1 cup frozen mango chunks)
  • ½ teaspoon lemon juice
  • 1 tablespoon honey (use agave nectar to make vegan)

Instructions

  • Wash and dry mango. Cut the mango lengthwise alongside the pit and with a spoon, scoop the flesh from the mango sides and place in a blender.
  • Add the lemon juice and the honey to the blender and purée until smooth. Add a little water if necessary to move the fruit around in blender.
  • Pour the mixture into a freezer-safe container or dish and freeze until firm, about 4 hours.

Notes

Expert Tips
  • You can use 1 cup of frozen mango chunks instead of a fresh mango but be sure to use a blender that handles frozen fruit well. I use a Vitamix and love it. If you don't have a Vitamix or a Blendtec you can use a regular blender. You might find that you need to add a bit more liquid to the fruit to get everything moving in the blender.
  • You can make a sorbet out of almost any kind of fruit. Watermelon Strawberry Sorbet is one of my favorite sorbets and comes together just as easily as this mango sorbet.
  • If you would like to make a vegan mango sorbet, you can substitute agave nectar for the honey.
