Heat the oil in a 10-inch skillet over medium-high heat. Add the chopped onions to the pan and cook, stirring occasionally for 2 minutes.
Add the garlic to the pan and cook, stirring frequently for 30 seconds.
Add the spinach and cook, stirring frequently until the spinach has wilted, about 1 minute.
Add the beans to the pan and heat, stirring frequently for 30 seconds.
Remove the pan from the heat and set it aside.
In a medium-sized mixing bowl, whisk together the eggs, cream, salt, and pepper.
Stir in the cheese and chopped tarragon. Next, fold in the spinach and bean mixture.
Pour the mixture into a lightly buttered 5x5-inch baking dish and place the dish on a rimmed baking sheet to catch any possible spills.
Bake for 25 minutes or until the quiche is puffed and golden. Let the quiche cool for a few minutes before eating.
