Crustless Coronation Quiche For One

Ingredients

  • ½ tablespoon olive oil
  • ½ cup chopped onions
  • 1 clove garlic , minced
  • 1 cup baby spinach , packed
  • ½ cup canned white northern beans (cannellini beans or white kidney beans), rinsed and drained
  • 2 large eggs
  • 4 tablespoons heavy cream
  • teaspoon salt
  • teaspoon coarsely ground black pepper
  • ½ cup shredded cheddar cheese
  • 1 ½ teaspoons fresh chopped tarragon

Instructions

  • Heat the oven to 375° F (190° C).
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the chopped onions to the pan and cook, stirring occasionally for 2 minutes.
  • Add the garlic to the pan and cook, stirring frequently for 30 seconds.
  • Add the spinach and cook, stirring frequently until the spinach has wilted, about 1 minute.
  • Add the beans to the pan and heat, stirring frequently for 30 seconds.
  • Remove the pan from the heat and set it aside.
  • In a medium-sized mixing bowl, whisk together the eggs, cream, salt, and pepper.
  • Stir in the cheese and chopped tarragon. Next, fold in the spinach and bean mixture.
  • Pour the mixture into a lightly buttered 5x5-inch baking dish and place the dish on a rimmed baking sheet to catch any possible spills.
  • Bake for 25 minutes or until the quiche is puffed and golden. Let the quiche cool for a few minutes before eating.
