Ingredients

  • 1 tablespoon butter
  • 2 large eggs
  • teaspoon kosher salt
  • teaspoon black pepper
  • 1 fully-cooked breakfast sausage
  • 2 tablespoons shredded cheddar cheese
  • 1 tablespoon chopped green onions

Instructions

  • Melt the butter in a small skillet over medium heat. While the butter is melting, crack two eggs in a small bowl and beat them with salt and black pepper.
  • Pour the eggs into the pan and cook, stirring continuously with a rubber spatula, making sure to scrape the bottom of the pan. Transfer the cooked eggs to a bowl.
  • Chop or crumble the cooked sausage patty and add it to the bowl.
  • Top with shredded cheese and chopped green onions.
  • Enjoy immediately.
