Ingredients

  • ¼ of a small onion , thinly sliced (about 3 ounces)
  • 1 (6-ounce) boneless skinless chicken breast or thigh
  • ¾ cup low sodium chicken broth
  • ¼ cup lemon juice
  • ¼ teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • cup capers , drained

Instructions

  • Begin by layering thinly sliced onions in the base of a 1.5-quart slow cooker.
  • Place the chicken breast or thigh directly on top of the onions.
  • In a small bowl, whisk together the chicken broth, lemon juice, salt, and pepper. Pour over the chicken.
  • Sprinkle capers over the chicken.
  • Secure the lid on the slow cooker and set it to cook on Low for 4 hours.
  • Once cooked, the Chicken Piccata is ready to be served. Pair it with a side of your choice, such as fluffy rice, al dente pasta, or a fresh salad for a complete meal.
