Easy Mini Apple Fritter Monkey Bread

This wonderful Mini Apple Fritter Monkey Bread is easily made with refrigerator biscuits, chopped apples, cinnamon, and brown sugar. Baked in a ramekin this sweet pull-apart bread makes the perfect apple filled dessert.

Ingredients

  • 1 tube 8 or 10-count refrigerator biscuits
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons salted butter , melted (plus a little extra butter for greasing the ramekin)
  • 1/2 cup diced apples

TOPPING

  • 1 tablespoon salted butter , melted
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  • Heat toaster oven to 350 degrees F (177 degrees C).
  • Cut each biscuit into quarters and roll each quarter into a ball. Set aside.
  • Mix together the sugars and the cinnamon in a small bowl and transfer to a small ziplock bag.
  • Dip each ball of dough into the melted butter and drop into the bag of sugar.
  • Close and shake the bag until all balls of dough are completely coated.
  • Generously grease your ramekin.
  • Line the bottom of the ramekin with a layer of the coated dough balls.
  • Top with a layer of diced apples.
  • Place another layer of the dough on top of the apples.
  • In a small bowl, blend the melted butter, brown sugar and cinnamon for the topping.
  • Pour over the top of the dough in the ramekin.
  • Bake in the toaster oven for 25-30 minutes, until top is slightly browned.
  • Remove from oven and let sit for 2-3 minutes. Carefully invert onto a plate.
