Heat 1 tablespoon of the olive oil in a medium skillet over medium-high heat. Add the onion and the red bell pepper and cook, stirring occasionally, 5 minutes. Add the garlic and cook for a minute longer.
Add the tomato paste and cook, stirring for 1 minute.
Add the ground beef, 2 tablespoons of water, salt and pepper. Stir and cook until browned, about 4 minutes.
Remove from the heat and transfer meat mixture to a plate.
Wipe out the skillet and return to medium heat. Brush both sides of the pita bread with 1 teaspoon of olive oil and sprinkle with a pinch of salt, then lightly toast on the skillet, about 45 seconds per side.
Arrange pita bread on a baking sheet and top evenly with the shredded gouda.
Spoon the meat mixture over the cheese and place baking sheet in the oven to bake 5-6 minutes or until cheese melts.
Slice into wedges and top with avocado, if desired
