Beef and Cheese Pita Pizza

Small Beef and Cheese Pita Pizza that is perfect for one person. Whole wheat pita bread topped with smoked gouda and flavorful ground beef, chopped bell peppers, onions and garlic.

Ingredients

  • 1 tablespoon olive oil , (plus 1 teaspoon for toasting pita)
  • ½ cup chopped onions
  • ½ cup chopped red bell peppers
  • 1 clove garlic , minced
  • 1 teaspoon tomato paste
  • 3-4 ounces ground beef , (about 3/4 of a cup or about the size of your fist)
  • 2 tablespoons water
  • ½ teaspoon kosher salt , (plus a pinch for the toasted pita)
  • ¼ teaspoon coarsely ground black pepper
  • 1 piece pita bread
  • ½ cup shredded smoked gouda
  • sliced avocado (optional)

Instructions

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 1 tablespoon of the olive oil in a medium skillet over medium-high heat. Add the onion and the red bell pepper and cook, stirring occasionally, 5 minutes. Add the garlic and cook for a minute longer.
  • Add the tomato paste and cook, stirring for 1 minute.
  • Add the ground beef, 2 tablespoons of water, salt and pepper. Stir and cook until browned, about 4 minutes.
  • Remove from the heat and transfer meat mixture to a plate.
  • Wipe out the skillet and return to medium heat. Brush both sides of the pita bread with 1 teaspoon of olive oil and sprinkle with a pinch of salt, then lightly toast on the skillet, about 45 seconds per side.
  • Arrange pita bread on a baking sheet and top evenly with the shredded gouda.
  • Spoon the meat mixture over the cheese and place baking sheet in the oven to bake 5-6 minutes or until cheese melts.
  • Slice into wedges and top with avocado, if desired
