Ingredients

  • 1/2 tablespoon olive oil
  • 1 clove garlic , minced
  • 1/8 teaspoon turmeric
  • 1/2 cup white rice
  • 3/4 cup chicken broth
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced cooked chicken
  • 1/2 small onion , thinly sliced
  • 4 leaves basil , torn
  • 1 teaspoon lemon juice
  • 1/4 cup soy sauce , optional
  • 1/4 teaspoon hot sauce , or use more if you like it very spicy (optional)

Instructions

  • Heat the oil on medium heat in a small saucepan. Add the garlic and cook for 1 minute, stirring occasionally. Add the turmeric and uncooked rice and cook, stirring for 1 minute.
  • Add the broth, salt, and pepper to the pan and bring to a boil.
  • Reduce the heat to low, cover the pan and cook for 10 minutes.
  • Remove the pan from the heat and set aside.
  • Place the cooked chicken, sliced onions and basil in a bowl and mix in the lemon juice.
  • Spoon in the rice.
  • To make a dipping sauce, combine the soy sauce and the hot sauce in a small bowl and serve on the side.

Notes

This recipe can easily be doubled.
