Minty peas are a popular dish in the United Kingdom, often served as a refreshing side during spring and summer months. The combination of sweet peas and cooling mint is a beloved one. Our variant, however, brings a unique twist with the inclusion of spicy crumbled chorizo, onions, and garlic, adding a depth of flavor and a hint of spice.

  • Olive oil: I use extra virgin olive oil in this Minty Peas recipe and in every other recipe on One Dish Kitchen that calls for olive oil. Extra virgin olive oil is the least processed form of olive oil. It is an unrefined oil and the highest-quality olive oil you can buy. Because of the way extra virgin olive oil is made, it retains a more true olive taste. It also contains more of the vitamins and minerals found in olives. It’s my favorite type of olive oil, but you may use light olive oil instead.
  • Chorizo: In this recipe, I recommend using Mexican chorizo. This type of chorizo is made with ground pork and its red color comes from spicy peppers. Chorizo can be replaced with other spicy sausages or left out for a vegetarian version.
  • Onions and garlic: These ingredients add so much flavor to this dish. Definitely don’t leave them out.
  • Peas: Use canned peas that have been rinsed and drained or frozen and thawed peas.
  • Mint leaves: Fresh mint leaves are best for this recipe. However, dried mint can be used in a pinch.
  • Rice: Use cooked white or brown rice.
  • Cotija cheese: If unavailable, feta cheese can be used as a substitute.

How To Make Spicy Peas With Mint

  1. Heat the oil in a small skillet on medium-low heat. Add the chorizo and cook until browned, about 10 minutes, breaking up any large pieces. Remove the cooked chorizo from the pan and place on a plate lined with a paper towel to drain.
  2. Place the skillet back on the stove and add the onions and garlic to the pan and cook until onions are translucent, about 5 minutes. Stir in the peas and cook, stirring occasionally for 3 minutes. Stir in the cooked chorizo. 
  3. Remove the pan from the heat and stir in the mint. Serve over rice and top with crumbled Cotija cheese
