A few weeks ago our old friends who recently moved away came in town for a visit.  These friends lived in the same neighborhood as we did and our kids grew up together.  When we learned they were coming for a visit, we knew we wanted to get together.

I made an quick Spinach Salad with crumbled bacon, sliced strawberries and crumbled feta.  For the dressing, I made this wonderful small batch Poppyseed Dressing which had the perfect balance of sweet and tangy.

This small batch Poppyseed Dressing is just enough for a few salads.  I like to make my dressings up fresh and use them right away or within a day or so.  This recipe gives me the perfect amount.

Small Batch Poppy Seed Dressing - a simple, fresh and flavorful salad dressing made with white wine vinegar, sugar or agave, garlic, poppy seeds, dijon mustard and olive oil. No need to make a large batch, this recipe will give you the perfect amount.

Ingredients
  • 2 tablespoons white wine vinegar
  • 2 tablespoons sugar or agave
  • 1/2 teaspoon poppy seeds
  • 1/4 teaspoon dijon or ground mustard
  • 1/4 cup olive oil
Instructions
  1. Whisk the vinegar and the sugar or agave in a small bowl until the sugar is mostly dissolved.
  2. Either use a garlic press or hold garlic clove at the broader end and run it against a microplane's "teeth". Add to bowl.
  3. Add the poppy seeds, mustard, and oil and whisk to combine.
  4. Transfer to covered container and store in the refrigerator. The dressing will separate when it sits; shake to combine before using.
