When I’m eating out at a restaurant, I rarely order it.  So many times, I’ve found restaurant chicken salad to be way too salty or made with too much mayonnaise. I want to taste the chicken in the chicken salad and the crunch of the celery and nuts.

My Chicken Salad For One is exactly the kind I love and thankfully, it’s an easy recipe so I tend to make it often.

This Chicken Salad for one is packed with flavor and crunch. Filled with crunchy pecans, sweet grapes and other amazing flavors. Easily made with poached chicken or the perfect recipe to use rotisserie chicken in. A wonderful single serving recipe.This salad is a great one to make if you have leftover cooked chicken from an earlier recipe or from a rotisserie chicken you may have picked up from the grocery store.  If not, you can easily poach the chicken and it will be cooked in no time.

This chicken salad is crunchy, tangy, sweet and creamy.

For the crunch, I add chopped celery along with chopped pecans.  For the tangy, you’ll find chopped dill pickles and capers.  As for the sweet, I can’t resist a handful of chopped grapes and for the creamy, a bit of mayo and some tangy stone ground mustard.

The flavors have the chance to mingle and develop.

Ingredients
  • 4 cups chicken thighs, poached or 2 cooked
  • 1/2 teaspoon salt
  • 3 hard boiled eggs, chopped
  • 2 celery stalks, chopped
  • 1/2 cup dill pickles, chopped
  • 1/2 cup red grapes, chopped
  • 1/2 cup pecans, chopped
  • 2 tablespoons capers
  • 1/3 cup mayonnaise
  • 1 tablespoon stone ground mustard
  • 1/2 teaspoon black pepper
Instructions
  1. *POACH THE CHICKEN*
  2. Place the chicken in a single layer on the bottom of a pot. Sprinkle the salt over the top.
  3. Cover the chicken with water. Pour in enough cool water to cover the chicken by an inch or two.
  4. Bring the water to a boil over medium-high heat.
  5. Reduce to a simmer, cover the pot and cook gently for 10-15 minutes, until just cooked through.
  6. Remove the chicken from the pot and place it on a cutting board to cool.
  7. *TO MAKE THE REST OF THE SALAD*
  8. Add the hard boiled eggs, celery, pickles, grapes, pecans and capers to a bowl. Stir in the mayonnaise and the mustard.

  9. When the chicken is cool enough to handle, cut it into cubes or shred it and add to the bowl. Season with pepper and additional salt, if necessary.
  10. Serve warm, at room temperature or chilled.
