Single serving peanut butter cookies sure come in handy when that craving for a little something sweet hits. For me, it hit hard as I was watching the last election debate the other night.
Is anyone else tired of all the election coverage? There is so much anger between the candidates and so much arguing back and forth from their campaigns, I need a break. I find that stepping away from Facebook and turning of the news can be so refreshing and completely necessary.
Having said that, I did find myself watching the final debate last week. I’m such a political junkie, I just can’t help but get drawn in.
I also think it’s also safe to say that I might be a little bit of a stress eater. When I start watching these debates, I always seem to crave something sweet. My emotions run high, my heart races just a little bit. These debates are a little stressful. This is where my single serving deep dish peanut butter cookie comes in handy.
It’s a single serving dessert which is totally perfect for portion control and in times like these, portion control is a must.
It wasn’t like I was making a batch of cookies – I made one. One fantastic, rich, peanut butter loaded crumbly cookie in a dish. Total time from start to finish was under 15 minutes. No leftovers yet easy enough to make second one if you so choose.
A few tablespoons of flour, a pinch of salt, baking powder, peanut butter, brown sugar and an egg yolk were all the ingredients needed. I mixed the ingredients together in one bowl and poured it into an oven-safe ramekin to bake for 8 minutes. Almost too easy, right?
Peanut butter cookies are always a hit and if you’re a peanut butter lover, rejoice! This cookie is for you. It melts in your mouth. The edges are crisp and the center is soft. Peanut butter cookie perfection!
When I made this peanut butter cookie the other night, I realized I was out of brown sugar but that was totally okay. I made my own brown sugar and it’s so easy to do. All you need to make brown sugar is sugar, of course and molasses. For this peanut butter cookie recipe, I used two tablespoons of granulated sugar and 1/4 teaspoon of molasses. Mix the two ingredients well with a fork and voila, brown sugar.
If you need to make a larger batch of brown sugar, mix together 1 cup of brown sugar and 1 tablespoon of molasses. No quick run to the grocery is needed.

- 2 tablespoons brown sugar
- 1 egg yolk
- 3 tablespoons peanut butter (I use creamy)
- 2 tablespoons all-purpose flour
- 1/8 teaspoon salt
- 1/8 teaspoon baking powder
- pinch of granulated sugar for topping
- Preheat oven to 350 degrees F.
- In a small bowl, mix together the brown sugar and the egg yolk with a fork.
- Add the peanut butter and mix well.
- Add the flour, salt and baking powder and stir until ingredients are well incorporated.
- Pour into a greased ramekin.
- Sprinkle a pinch of sugar over top of cookie.
- Bake for 8 minutes
